If there is a fixed term summer letting, to end by a fixed date in September, does a deposit have to be protected by the DPS ? Maybe there are rules for the duration of a letting, but I guess in holiday areas, eg a cottage on the coast, there are plenty of people who want to rent such a place for the whole summer season.

As a holiday letting is not an assured shorthold tenancy (assuming it’s a genuine holiday letting), any deposit doesn’t need protecting.
