As you long as you haven’t accepted the person leaving in any way, then they remain liable until the end of the term – after a which, a new tenancy should be done for the remaining tenants (including any replacement if applicable).
All correspondence including rent demands must remain in the three names as that will be evidence that you haven’t accepted the person leaving.
Section 1 Housing Act 1988 specifically says that the tenancy continues as long as at least one occupies as their main home.
